Basic Healthy Granola Bars

Full of satisfying protein, fat, and fiber... without all the sugar.



Everyone needs a healthy granola bar recipe. You never know when you'll get stuck in traffic or a long work meeting (you know, the one that could've been an email).


I've been experiementing with granola bar recipes for quite some time and this one's a winner, a classic you'll be making over and over again.


These will leave you feeling full and shouldn't cause acne like store-bought granola bars often do. Packaged granola bars are typically full of sugar and high on the glycemic index - a sure way to spike your blood sugar and if you're acne prone, result in a nasty breakout.


Basic Healthy Granola Bars


Ingredients

  • ½ cup almond flour

  • ½ cup flax meal

  • 1½ cups sprouted or quick oats

  • 1 cup sunflower seeds, ground 

  • ¼ tsp. natural salt

  • ¼ cup coconut oil (melted)

  • ¼ cup honey (melted)

  • 1 tsp vanilla extract

  • 2 tbsp dairy-free mini chocolate chips (optional)


Directions

  1. Line an 8x8-inch baking dish (or 2 loaf pans) with parchment paper and preheat oven to 325F. 

  2. Combine almond flour, flax meal, oats, ground sunflower seeds and salt in a mixing bowl. 

  3. Mix in the wet ingredients – coconut oil (melted), honey and vanilla extract. 

  4. Lastly, mix in the mini dairy-free chocolate chips. 

  5. Press mixture into pan(s). Press hard! This helps them hold together as bars.

  6. Bake for about 25 minutes or until golden. Remove from the oven and let cool/set for at least 30 minutes before slicing into bars.


Tips:

  • Use a coffee grinder to grind sunflower seeds

  • Gently melt coconut oil and honey together in a pot if needed
