This is my favourite treat to keep on hand. They remind me of those Ferrero Rocher chocolates (even though there's no chocolate in these). Walnuts and flax seeds help to build healthy cell membranes for better skin health, and dates provide natural sweetness, fiber and minerals.
Ingredients:
1 cup walnuts, coarsely chopped
1/2 cup dates, pitted
2 tbsp. ground flax seeds
2 tbsp. hazelnut butter
1 tsp. cinnamon
1/2 tsp. vanilla extract
1 pinch salt
1 tsp. water
Garnish:
1/4 cup finely chopped walnuts
Instructions:
Process all ingredients (except the garnish walnuts) on high until the batter just starts to become sticky.
Roll into balls. If they won't stay together, add another tsp. of water and process for a few more seconds.
Roll balls in finely chopped walnuts.
Recipes Notes:
Store in the refrigerator for up to a week.
Option to roll balls in shredded coconut, cocoa powder, etc.
