Chia Pudding

Your future-self will thank you when you prepare this snack ahead of time. Chia pudding is packed with fibre and healthy fats to keep your hunger at bay, your energy strong, and your skin glowing.

Ingredients:
1 1/2 cups coconut milk (or almond milk)
1/4 cup chia seeds
1 cup apple, diced
1 tsp freshly squeezed lemon juice
1 tsp vanilla extract
1 tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp salt
Optional: Fresh fruit for garnish.
Directions:
1. Combine all ingredients in a large bowl and mix well. Allow the mixture to sit at room temperature for 20 minutes, giving the chia seeds a chance to absorb the liquid.
2. Add any toppings (optional).
3. Transfer to jars and refrigerate for at least 4 hours or overnight.
Yield: 3 cups (3 servings)
Time: 5 minutes prep, 4 hours idle time
