Homemade Parsnip Fries

Here's a sneaky way to get more nutrients into your diet. Parsnip fries look just like regular French fries, but come with more health benefits. They're five times higher in fibre and a good source of Vitamin C and folic acid. These crispy parsnip fries look like regular French fries but taste similar to sweet potato fries.

Servings: 4


Ingredients:

  • 3 medium parsnips, washed and sliced into sticks (1/3 thick)

  • 2 tbsp. avocado oil

  • 1/2 tsp. natural salt

Directions:

1. Preheat oven to 425F.

2. Toss parsnip sticks in avocado oil and salt.

3. Arrange parsnips evenly on a baking sheet or baking stone.

4. Bake until crispy, about 30 minutes, turning them once halfway through.
