Is it too early for soup? Maybe. But it's never too early for lentils!
Lentils are a wonderful source of protein with 18 grams per cup, as well as an excellent source of fiber with 16 grams per cup. They're also a source of prebiotics, so include lentils in your diet for better gut health. This recipe is super easy, it takes 5 minutes of prep and 45 minutes to cook. Enjoy!
Lynda's Lentil Soup
Ingredients:
1 cup green lentils, rinsed
4 cups filtered water
1.5 onion bullion cubes
2 cups broccoli, chopped
2 cups spinach, tightly packed
4 cloves garlic, chopped
1/3 cup coconut cream
1/2 tsp. cumin
1/2 tsp. curry powder
1/2 tsp. oregano
1/2 tsp. thyme
1/4 tsp. natural salt
1/4 tsp. pepper
Optional garnish:
Parsley
Lemon
Instructions:
Add lentils, filtered water, onion bullion cubes, garlic, cumin, curry powder, oregano thyme, natural salt, and pepper to a large pot. Bring to a boil, then reduce to a simmer. Cover and simmer for 30 minutes.
Add broccoli and simmer for another 10 minutes.
Take the soup off the heat, mix in spinach and coconut cream. Taste and add additional spices if desired.
Enjoy with fresh parsley and lemon.
