Secret Chickpea Blondies

Chickpeas give these a good punch of protein (don't worry - you won't even know they're there). They're also gluten-free and can be made dairy-free if you replace the Smarties with some dairy-free white chocolate chips! Lastly, they're naturally sweetened with maple syrup and coconut sugar. You're going to love them.

Obviously these are perfect for Valentine's Day, but change the colours of the Smarties and they're perfect for any occasion.


Secret Chickpea Blondies

Ingredients

  • 1 400mL can of chickpeas, rinsed

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1 tsp. vanilla extract

  • 1 egg

  • 1 cup gluten-free flour

  • 1/2 cup coconut sugar

  • 1/4 tsp. salt

  • 1/2 cup Smarties or dairy-free alternative

Directions

  1. Preheat oven to 350F.

  2. Blend all wet ingredients - chickpeas, coconut oil, maple syrup, egg, vanilla extract.

  3. Combine dry ingredients (except for Smarties) in a medium size bowl - gluten-free flour, coconut sugar, salt.

  4. Combine wet and dry ingredients. Spread onto a small baking sheet lined with parchment paper (mine is 7x13inch). Top with smarties or dairy-free alternative.

  5. Bake for about 25 minutes - until the edges are golden.
