I can't say enough about seeds! They provide essential proteins, healthy fats, fiber, vitamins, and minerals. If healthy skin is your goal, seeds are your friends. That's why I cherish this recipe. It's made with five different seeds and not much else. If you're wondering if buckwheat is a seed - yes, it technically is! And despite its name, buckwheat is 100% gluten-free. I hope you enjoy this recipe!
Five Seed Flatbread
Ingredients:
1/2 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup buckwheat groats
1 tsp olive oil
2 tbsp ground flax seeds
1 tbsp whole chia seeds
1/2 cup filtered water
1/4 tsp salt
Directions:
Preheat the oven to 300F and line a baking sheet with unbleached parchment paper.
Add the sunflower seeds, pumpkin seeds and buckwheat groats to the baking sheet. Pour the olive oil over and gently toss. Bake for 15 minutes.
In the meantime, combine ground flax seeds, chia seeds and water in a large mixing bowl. Let that sit for 20 minutes until it thickens into a gel-like texture.
Remove the seeds from the oven and increase the temperature to 325F.
Add the toasted sunflower seeds, pumpkin seeds, buckwheat groats and salt into the thickened chia/flax mixture. Mix well.
Transfer the mixture to an 8-inch baking pan lined with unbleached parchment paper.
Bake for 30 minutes. Allow the flatbread to cool and set for 40 minutes before slicing.
Notes:
Store in the refrigerator.
