There's a lot of nutrients out there to support our skin, but let's take it back to basics for second with Vitamin A. Everyone has heard about Vitamin A, but what does it actually do?
Here's a few ways Vitamin A supports our skin:
Stimulates collagen production
Strengthens the integrity of the skin cells, so they can hold fluids (think hydration)
Speeds up cell turnover for faster wound healing
Protects skin from cellular damage caused by oxidative stress and environmental toxins (yes, Vitamin A is an antioxidant!)

Okay so let's get to the recipe! It's been tried and tested and I know you'll love it.
Goji Glow Bars
Ingredients
2 cups rolled oats
¼ cup flax meal
1 tsp cinnamon
1 tsp baking powder
¾ tsp salt
2 eggs
1 ½ cups unsweetened almond milk
2 tsp vanilla extract
¼ cup honey
½ cup walnuts, pieces
1 cup carrots, grated
½ cup goji berries
Instructions
Preheat oven to 325F and line a 9x7 inch baking pan with unbleached parchment paper.
In a mixing bowl, combine rolled oats, flax meal, cinnamon, baking powder, and salt.
In another mixing bowl, combine eggs, almond milk, and vanilla extract.
Add the contents of the wet bowl into the dry bowl, mix until combined.
Lastly, add the honey, walnuts, shredded carrots and goji berries. Mix well.
Place another piece of parchment paper over your dish. This will prevent the goji berries from burning.
Bake for 75 minutes, enjoy warm or cold.
Notes
Allow bars to cool down completely and store in an airtight container in the refrigerator.
